Who doesn't like pasta? Today, we searched for a lighter version of a favorite pasta dish with the added bonus that it is both gluten-free and meatless. Try it out! PS - Minimalist Baker is a great website for tasty vegan or vegetarian recipes. It's a great one to bookmark!
Here are two tried and true recipes that I love and are perfect for this rather dreary British-feeling weather we are having today.
The first is a tomato and coconut cassoulet. It sounds complicated, but it easy to make. I have substituted cannellini beans for the navy beans as that is what I had in my pantry and it worked just as well. I also added a few red pepper flakes but left out the chili as my youngest still isn't a huge fan of too much heat. This recipe is terrific as leftovers. The favors blend together overnight and are stewy perfeciont for lunch the next day. Here's the link:
The second recipe is a vegetarian Shepherd's Pie. If you are looking to make the meal a bit lighter, cauliflower makes a perfect substitute for the potatoes in the mash, but go a bit easier when adding liquid as cauliflower doesn't have the same amount of starch as potatoes and won't need the same amount of liquid to get it to a creamy consistency.

We know what we eat has an impact on both our health and our planet.
