Spaghetti Squash with Basil Pesto

Who doesn't like pasta?  Today, we searched for a lighter version of a favorite pasta dish with the added bonus that it is both gluten-free and meatless.  Try it out!  PS - Minimalist Baker is a great website for tasty vegan or vegetarian recipes.  It's a great one to bookmark!

Recipes for rainy days...

Here are two tried and true recipes that I love and are perfect for this rather dreary British-feeling weather we are having today.

The first is a tomato and coconut cassoulet.  It sounds complicated, but it easy to make.  I have substituted cannellini beans for the navy beans as that is what I had in my pantry and it worked just as well. I also added a few red pepper flakes but left out the chili as my youngest still isn't a huge fan of too much heat. This recipe is terrific as leftovers. The favors blend together overnight and are stewy perfeciont for lunch the next day. Here's the link:

The second recipe is a vegetarian Shepherd's Pie.  If you are looking to make the meal a bit lighter, cauliflower makes a perfect substitute for the potatoes in the mash, but go a bit easier when adding liquid as cauliflower doesn't have the same amount of starch as potatoes and won't need the same amount of liquid to get it to a creamy consistency.

We know what we eat has an impact on both our health and our planet. Without being preachy (no one likes preachy), we hope you will join us in an effort to reduce our carbon footprint and possibly, our waistline. Though we will forgo meat for these meals, flavor is a non-negotiable. In this light, we will be posting recipes, links to websites and recommendations of cookbooks that will help you enjoy and savor your Monday meals.
